Kate’s Easy Weeknight Dinner Recipe

 

Don’t know what to do with all of those leftover chicken cutlets? I love to throw them into pasta for a super quick and delicious weeknight dinner!
Chicken Parm Pasta 

– Chicken Cutlets (heated and cut up) 1 lb. fresh Rigatoni (I love pasta from Livoti’s Old World Market)
– Marinara Sauce (I use 12 oz.)
– Shredded Mozzarella Cheese (heavy on the cheese, 1 cup or more)
– Romano cheese (sprinkle as you like!)

Mix together in a big pasta bowl and serve with a side salad and a delicious glass of vino from Bottles by Sickles (and don’t forget to mention Monmouth Moms for your wine club discount!). Check out our wine club here!
