Sickles’ Own Beer Cheese Spread

A new favorite just in time for the Big Game!

Equipment: Food Processer or Immersion Blender

Ingredients* All available at Sickles Red Bank & Bottles by Sickles
  • 1lb Prairie Breeze Cheddar, grated
  • 8 oz beer (we chose Toms River Brewing St. John’s Irish Red Ale)
  • 4 oz cream cheese
  • 1 clove garlic, finely chopped
  • ¼ cup red wine
  • 1 tbsp whole grain mustard
  • 1 tbsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • ½ tsp paprika
  • *Have all ingredients at room temperature before making the recipe.

Directions

Place all of the ingredients into a food processor/blender besides the beer. Blend and pulse until creamy. Slowly blend the beer in, a quarter cup at a time. Transfer the mix into a bowl and seal tightly with a lid or film wrap. Let it refrigerate overnight.

Take out the spread and snack away! Best when slathered on a warm hot pretzel, vegetable crudité, or your favorite crackers.

Tip

If you wish for the spread to be thicker, always keep a cheese cloth handy in your cabinet!

Wrap your spread in cheese cloth, tie it to your kitchen sink faucet, and just let it hang out for an hour. This will allow the any excess moisture to leave the spread and will result in a thicker consistency. A cheese cloth is a great thing to have lying around.
